Potatoes and Sausage

 This has been my go-to meal as of late because it is so dang easy.  I just fill that pink bowl with potatoes, sweet potatoes, green peppers, onions, and kielbasa sausage.  Toss it with a little olive oil, kosher salt, pepper, thyme, and paprika.  Then bake it on a cookie sheet for about 45 minutes at 400 degrees.  I stir it all about half way through.  
It's really good and the kids eat it mostly good.  Some of them pick out the sweet potatoes (more for me!) and the green peppers.  Tristan is completely nuts and picks out the onions too! lol! 

 This particular time of making it, we saved the leftovers and the next morning I made a great little breakfast for Jeremy and I after the kids were at school.  I just reheated the potatoes and sausage and paired it with some scrambled eggs and toast.  It was even better!! So, I think now I will just at eggs and toast to the supper meal for the whole family as well.
